I've used Skanlite for a number of years and it works fine.
One think it doesn't do that a lot of commercial Windows software does is scan several pages and create only one PDF. I'll have to to try gscan2pdf as well..!
figlet and toilet are actually very useful for banners in /etc/motd files and the like.
