To my mind, open allows for something crucial: the idea that we cannot predict from whence the good ideas will come. It's also called permissionless innovation. The Internet has be built with that in mind from the bottom up. Open is about establishing and adhering to a simple, well articulated (and enforceable) set of rules (i.e. transparent), applied without discrimination. To my mind, that's a set of values that include egalitarianism. It's not just a means.
Another option is Collabora Office - https://www.collaboraoffice.com/ - which is, I believe, bundled with ownCloud/NextCloud. It seems very similar to Open365 in that it seems to have LibreOffice working behind the scenes. Working on setting one of these two up here in NZ for people to test...
