Tricky to diagnose here, I would double check the Pi is getting enough juice, does it have an icon showing up in the top right of the screen indicating it's not getting enough power? The other option is if it runs too hot, it throttles back. Pop me an email and we can take a look and see if we can figure it out - andy.thornton@redhat.com

There is an active discussion on the RetrpPi github page so it looks like it's in the works (https://github.com/RetroPie/RetroPie-Setup/issues/2091) but it's a ways off. For my use it wasn't a problem, I am happy with the current RetroPi setup out of the box and probably won't be modding it that much outside of simple tweaks. I may setup another box to look at getting support for stretch and contribute back to the project.
