Over the last while, I've become a huge fan of Apostrophe. That said, I do have a soft spot for Mark Text and used Quilter rather extensively when I first moved to elementary OS in 2020.

Or, if your Chromebook is supported, you could just go full-on Linux with <a href="https://galliumos.org/" target="_blank">GalliumOS</a>. My daughter's Chromebook runs it and it's a lot more flexible now, even with the limited storage and memory.
