What I like about writing my own HTML and CSS manually is that I can keep my pages much simpler, and therefore understandable. This is good for when you go back later to troubleshoot and edit them.
It's also good to understand the particular requirements of xhtml in case you want to take your webpages and incorporate them into an ebook.
If you simply create a graphic or set of graphics, you also communicate to the illiterate.
