Gnumeric feels lightweight, but it is actually very powerful! A colleague of mine uses it all the time to prepare the publication-quality plots for our scientific articles.
I agree with your point. If somebody wants to start to use Linux, trying to configure it as a fake macOS could be a bad idea. There are surely going to be differences anyways, that would probably get in the way.
A total embrace of the new ways is, in my opinion, a good method to start.
